Daily Meal, 1/21/12: Saturday Brunch
This is the same meal I eat every saturday and it’s always just as good.
Oven-baked bacon, homefries, toast, fried eggs topped with aged gouda and a side of pears. Heaven.
Here is my homefries recipe.
Ingredients: 2-4 hard potatoes (not russet; go with the small yukon or red variety), 1/2 onion, 1/4-1/2 bell or sweet pepper (optional), brown sugar (optional), garlic, salt, pepper, paprika, oil (ex. virgin olive, safflower, almond and apricot seed all work, coconut does not). (This serves one as a side dish. Double for a full meal.)
Prep time: 30-40 mins
Before you cook anything, cut up everything. Use fewer potatoes at first and add more if your cut amount does not look like enough. The onions should be cut up pretty small.
Start a pot boiling with water and plenty of salt. The pot needs only enough water to submerge the potatoes.
Start the onions. Follow the instructions here to caramelize them. Once they’re done you can pile them on a plate to rest.
Once the water is boiling, add the potatoes. Stir them occasionally and check every few minutes to be sure you don’t over-cook them. Take them out when they’re al dente; you don’t want them too soft but you do want them cooked. Drain them and let them rest until you’re ready to use them.
Once the onions and potatoes are done, add some more oil to the pan and add the pepper (vegetable version) if you have it. Cook it at medium-high heat until it has some burn marks, then lower the heat to medium and cook to taste.
Add another tbsp of oil and then the potatoes. They will soak up most of the oil, so be careful to check that your pan is still greased. If it’s dry, add some more oil and mix it around. Cook the potatoes for a couple minutes, then add salt, pepper and paprika (I use smoked paprika). Mix well and continue cooking until you’re pleased.
Turn off the heat and add the onions to the pan, mixing well. You can also at this point put in bacon (just crumble a cooked slice and mix it in) or sausage if you’d like.
Warning: I almost never use enough salt in this dish. Don’t overdo it while you’re cooking, but you may want to bring salt with you to the table while you’re eating in case you have the same problem as I.
